Vegetable curry

 

Ingredients:

  • 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower, beans, etc.), chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1 cup coconut milk (optional)
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare the Vegetables:

    • Wash and chop the vegetables into bite-sized pieces.
  2. Sauté the Aromatics:

    • Heat oil in a large pan or pot over medium heat.
    • Add cumin seeds and mustard seeds. Allow them to splutter.
    • Add chopped onions and sauté until golden brown.
  3. Add the Spices:

    • Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Sauté for 1-2 minutes until the spices are aromatic.
  4. Add Tomatoes:

    • Add chopped tomatoes and cook until they become soft and the oil begins to separate.
  5. Cook Vegetables:

    • Add the chopped vegetables and mix well to coat them with the spice mixture.
    • Cover the pan and let the vegetables cook for 8-10 minutes, stirring occasionally.
  6. Add Coconut Milk (Optional):

    • If using coconut milk, add it at this stage to make the curry creamier. Mix well.
  7. Simmer:

    • Cover the pan again and let the vegetables simmer until they are tender. Add water if necessary to achieve the desired consistency.
  8. Garnish:

    • Sprinkle garam masala and fresh coriander leaves over the curry before serving.
  9. Serve:

    • Serve the vegetable curry hot with rice or Indian bread (such as naan or roti).
