 Feijoada is a delicious and hearty Brazilian stew that's typically made with black beans, pork, and beef. It's a traditional dish that has become a symbol of Brazilian cuisine. Here's a basic recipe for Feijoada:

Ingredients:

For the Stew:

  • 1 pound (about 2 cups) black beans, soaked overnight
  • 1 pound pork shoulder, cut into chunks
  • 1/2 pound smoked sausage, sliced
  • 1/2 pound chorizo sausage, sliced
  • 1/2 pound bacon, chopped
  • 1 pound beef (such as beef chuck), cut into chunks
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • Water, as needed

For the Rice:

  • 2 cups white rice
  • 4 cups water
  • Salt, to taste

For the Collard Greens:

  • 1 bunch collard greens, stems removed and leaves sliced thinly
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

For Garnish:

  • Fresh orange slices

Instructions:

  1. Prepare the Black Beans:

    • Drain and rinse the soaked black beans.
    • In a large pot, combine the black beans with enough water to cover them. Bring to a boil, then reduce the heat to a simmer. Cook until the beans are tender, about 1 to 1.5 hours. Drain and set aside.
  2. Cook the Meats:

    • In a large, heavy-bottomed pot, cook the bacon until it starts to brown.
    • Add the pork, beef, smoked sausage, and chorizo. Cook until the meats are browned on all sides.
    • Add the chopped onion and garlic. Sauté until the onion is translucent.
  3. Combine and Simmer:

    • Add the cooked black beans to the pot with the meats.
    • Add bay leaves, thyme, salt, and black pepper.
    • Add enough water to cover the ingredients. Bring to a boil, then reduce the heat to low, cover, and simmer for 2-3 hours until the meats are tender and the flavors meld.
  4. Prepare the Rice:

    • Rinse the rice under cold water until the water runs clear.
    • In a separate pot, bring 4 cups of water to a boil. Add the rice and salt, reduce heat to low, cover, and simmer until the rice is cooked and water is absorbed.
  5. Cook the Collard Greens:

    • In a pan, heat olive oil and sauté minced garlic until fragrant.
    • Add the sliced collard greens and cook until wilted. Season with salt and black pepper.
  6. Serve:

    • Serve the Feijoada over rice, accompanied by sautéed collard greens.
    • Garnish with fresh orange slices on the side.
