Patatas Bravas: Spicy Spanish Potatoes
Ingredients:

For the Potatoes:

4 large potatoes, peeled and cut into bite-sized cubes
Olive oil for frying
Salt to taste

For the Spicy Tomato Sauce:

2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 can (400g) crushed tomatoes
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
Salt and pepper to taste

For the Aioli:

1/2 cup mayonnaise
1 clove garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste

Instructions:



  1. Prepare the Potatoes:

    • Heat olive oil in a large pan over medium-high heat.
    • Fry the potato cubes until golden and crispy. Remove with a slotted spoon and place on a paper towel to drain excess oil.
    • Sprinkle with salt while they are still hot.
  2. Make the Spicy Tomato Sauce:

    • In a separate saucepan, heat olive oil over medium heat.
    • Add chopped onions and sauté until softened.
    • Add minced garlic and sauté for an additional minute.
    • Stir in crushed tomatoes, smoked paprika, cayenne pepper, salt, and pepper.
    • Simmer for 15-20 minutes until the sauce thickens. Adjust seasoning to taste.
  3. Prepare the Aioli:

    • In a small bowl, mix together mayonnaise, minced garlic, lemon juice, salt, and pepper. Adjust the seasoning to your liking.
  4. Assemble:

    • Arrange the crispy potatoes on a serving platter.
    • Drizzle the spicy tomato sauce over the potatoes.
    • Serve with a side of aioli for dipping.
