Vibrant Rainbow Pasta Salad


 Ingredients:

  1. 1 pound of your favorite pasta
  2. 2 tablespoons olive oil
  3. 1 cup cherry tomatoes, halved
  4. 1 cup cucumber, diced
  5. 1/2 cup red bell pepper, diced
  6. 1/2 cup yellow bell pepper, diced
  7. 1/2 cup green bell pepper, diced
  8. 1/2 cup carrots, shredded
  9. 1/4 cup red onion, finely chopped
  10. 1/2 cup feta cheese, crumbled (optional)

For the Rainbow Dressing:

  1. 1/4 cup olive oil
  2. 2 tablespoons balsamic vinegar
  3. 1 tablespoon honey
  4. 1 teaspoon Dijon mustard
  5. Salt and pepper to taste

Food Coloring Options:

  1. Red: Use a few drops of red food coloring
  2. Blue: Use a few drops of blue food coloring
  3. Green: Mix yellow and blue food coloring
  4. Yellow: Use a few drops of yellow food coloring

Instructions:

  1. Cook the pasta according to package instructions. Drain and rinse with cold water to cool.

  2. In a large bowl, combine the cooked pasta, olive oil, and the rainbow food coloring of your choice. Toss the pasta until it's evenly coated.

  3. In a separate bowl, whisk together the ingredients for the rainbow dressing - olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.

  4. Divide the dressing into separate containers and add the respective food coloring for each color of the rainbow. Stir well.

  5. In the pasta bowl, add each colored dressing to different sections of the pasta and toss until the pasta is evenly coated in all the vibrant colors.

  6. Add the cherry tomatoes, cucumber, bell peppers, carrots, and red onion to the pasta. Toss everything together until well combined.

  7. If desired, sprinkle crumbled feta cheese over the top.

  8. Chill the rainbow pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
