Mexican "Chicken Mole


 Mexican cuisine is "Chicken Mole is a rich and flavorful sauce made with a combination of chili peppers, chocolate, spices, and other ingredients. Here's a recipe for Chicken Mole:

Ingredients:

For the Chicken:

  • 1 whole chicken, cut into serving pieces
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

For the Mole Sauce:

  • 3 dried ancho chilies, stemmed and seeded
  • 3 dried guajillo chilies, stemmed and seeded
  • 3 tablespoons sesame seeds
  • 1/2 cup almonds
  • 1/4 cup raisins
  • 3 cloves garlic, minced
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground coriander
  • 3 tablespoons vegetable oil
  • 1/4 cup tomato paste
  • 4 cups chicken broth
  • 2 tablets Mexican chocolate (about 3 ounces), chopped
  • Salt to taste

Instructions:

  1. Season the chicken pieces with salt and pepper.

  2. In a large, deep skillet or Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat. Brown the chicken pieces on all sides. Once browned, remove the chicken and set it aside.

  3. In the same skillet, add 3 tablespoons of vegetable oil. Add the dried chilies, sesame seeds, almonds, raisins, minced garlic, ground cinnamon, ground cumin, ground cloves, and ground coriander. Toast the ingredients over medium heat for about 5 minutes, stirring frequently, until they become fragrant.

  4. Transfer the toasted ingredients to a blender. Add the tomato paste and 2 cups of chicken broth. Blend until you have a smooth sauce.

  5. In the same skillet, pour the blended sauce and cook over medium heat for about 5 minutes, stirring constantly.

  6. Add the remaining 2 cups of chicken broth and the chopped Mexican chocolate. Stir until the chocolate is completely melted and the sauce is smooth.

  7. Return the browned chicken pieces to the skillet, making sure they are fully submerged in the mole sauce. Bring the mixture to a simmer.

  8. Cover the skillet and let the chicken simmer in the mole sauce for about 45 minutes to 1 hour, or until the chicken is fully cooked and tender.

  9. Season the mole sauce with salt to taste.

Serve the Chicken Mole over rice and garnish with sesame seeds and chopped cilantro. Enjoy this delicious and authentic Mexican dish!
