Italian-inspired spicy curry

 

Italian Spicy Curry Recipe:

Ingredients:

  • 1 pound (450g) chicken or vegetables of your choice
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon red pepper flakes (adjust to taste for spice)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 can (14 ounces/400g) crushed tomatoes
  • 1 cup (240ml) chicken or vegetable broth
  • 1/2 cup (120ml) heavy cream
  • Fresh basil or parsley for garnish (optional)

Instructions:



  1. Prepare the Chicken or Vegetables:

    • If using chicken, cut it into bite-sized pieces. If using vegetables, chop them into even-sized pieces.
  2. Sauté Onion and Garlic:

    • Heat olive oil in a large pan over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add Spices:

    • Sprinkle dried oregano, basil, thyme, red pepper flakes, paprika, salt, and pepper over the onions and garlic. Stir well to coat the ingredients with the spices.
  4. Cook Chicken or Vegetables:

    • If using chicken, add the chicken pieces to the pan and cook until browned on all sides. If using vegetables, add them to the pan and sauté until they start to soften.
  5. Add Crushed Tomatoes:

    • Pour in the crushed tomatoes and chicken or vegetable broth. Stir to combine, bringing the mixture to a simmer.
  6. Simmer:

    • Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes, allowing the flavors to meld.
  7. Finish with Cream:

    • Stir in the heavy cream, adjusting the consistency and taste as needed. Simmer for an additional 5 minutes.


  8. Garnish and Serve:

    • Garnish with fresh basil or parsley if desired. Serve the Italian spicy curry over rice, pasta, or with crusty bread.
