Italian-inspired curry


 Ingredients:

  • Chicken or vegetables (e.g., bell peppers, zucchini, eggplant)
  • Olive oil
  • Garlic, minced
  • Onion, chopped
  • Italian herbs (basil, oregano, thyme)
  • Paprika
  • Tomato sauce or diced tomatoes
  • Chicken or vegetable broth
  • Salt and pepper, to taste
  • Optional: red chili flakes for some heat
  • Optional: a splash of red wine

Instructions:

  1. In a large skillet or pot, heat olive oil over medium heat.

  2. Add minced garlic and chopped onion. Sauté until the onion becomes translucent.

  3. If using chicken, add bite-sized pieces to the skillet and cook until browned.

  4. Add Italian herbs, paprika, and optional red chili flakes. Stir to combine and let the spices toast for a minute.

  5. Pour in the tomato sauce or add diced tomatoes. If using tomato sauce, you can also add a splash of red wine for depth of flavor.

  6. Add chicken or vegetable broth to achieve your desired consistency. Bring the mixture to a simmer.

  7. Season with salt and pepper to taste.

  8. Add vegetables like bell peppers, zucchini, or eggplant. Simmer until the vegetables are tender.

  9. Taste and adjust the seasoning as needed. If you want more heat, you can add additional red chili flakes.

  10. Serve the Italian-inspired curry over rice, pasta, or with crusty bread.
